1 chicken breast (cleaned and chopped into bite size pieces)
1/4 red onion, chopped
1 cup cherry tomatoes (roughly two handfuls) halved
1 cup shredded romaine lettuce
1 cup shredded mozzarella
1/2 cup shredded taco seasoned cheese
1/4 stick butter (I use avocado butter)
1/2 cup milk (I use creamy oat milk)
1/4 cup jarred jalapenos, chopped

What to do:
Heat some oil in a pan and add chopped chicken, seasoned with chili powder, cook through and put to the side
Heat butter until melted over medium head, add cheese and milk and stir continuously until combined. The cheese should stay melted, add a little more milk if it is hardening
Spread out tortilla chips on a large tray, sprinkle chicken over chips
Pour cheese sauce over top of chips and chicken
Layer the rest of your toppings over top and enjoy!
